Pinot noir vinified in white. Clear, elegant in its fine and silky perlage. Fresh between mineral hints, citrus and delicate bread crust. Sapid, persistent taste, excellent balance in its freshness. Wonderful with raw fish, tartare of fish and vegetables, and fish-based dishes.

- Production technique: Vinification of the whole grapes in white, with soft pressing. Low temperature fermentation. Draft during the spring following the harvest. Refermentation in the bottle at a controlled temperature of 17°.
- Ageing: In contact with the yeasts for 24 months, placed on pupitre with manual remuage. Disgorgement performed in March 2017. Then aging in the bottle.
